Park Hotel Tokyo has incorporated some tableware from the “ARAS” Sustainable Collection, a Japanese brand that produces its products at its own factory in Kaga City, Ishikawa Prefecture, into our breakfast pieces. The Cedar Bark series, in particular, utilizes 50% cedar bark, an industrial waste, mixed with resin to create a new material that reduces CO2 emissions by approximately 50%. Using recyclable materials helps minimize waste and reduce environmental impact. It is a sustainable tableware collection that emphasizes harmony with the environment.

Whey, a byproduct of the cheese-making process from cow’s milk, is used as a preparation water for bread. It is rich, nutritious, and lean. It is a delicious taste for everyone, with a cycle of local value creation that is possible only in the Nasu area of Tochigi Prefecture, where dairy farming is thriving.
VEGAN-100% domestic wheat
Only plant-derived ingredients are used, including domestic whole wheat flour, sake lees from a local sake brewery, and rice oil. Despite these ingredients, it is full-bodied with a rich wheat aroma and depth of flavor. The taste is not limited to health-conscious people or vegans, but can be enjoyed by everyone.
All eggs used for breakfast are domestic free-range eggs. Eggs are raised in an environment where hens can move around freely, and are fresh and safe eggs produced by healthy hens with less stress.
